OP Ribs steaks takes slightly longer to cook than ribeye because the bone serves as an insulator. They have similar taste profile as ribeye, but because OP Rib steaks cook more slowly than ribeyes, it may be juicer if left 1-2 minutes longer on the grill.
We would recommend a reverse sear in the oven before placing them on a grill.
If you intend to wow your guest, Bone-in steaks hold their shape better and make for a unique presentation!
